This customer's main products are vacuum fried mushroom chips and sweet potato chips. BAYI supplies the whole processing line, certainly include four sets of vacuum fryers. Initially, the customer didn't choose the vacuum macerating machines, just use ordinary macerating pool. In the practice, the mushroom chips and sweet potato chips is tasted a little hard, without crispy. After our professional process staffs checked their process methods and parameters, found out the cause finally.
The aim of macerating process is exchanging the moisture in the materials and expand the texture. After quick freezing and frying by vacuum fryer, the moisture will vaporate rapidly and the final product will have more loose texture, so the taste is very crispy.
For the material with compact texture, like mushroom, sweet potato and jujube, the ordinary macerating pool is not suitable for macerating perfectly. You need use vacuum macerating machine to do it. Vacuum condition could help to improve the exchanging speed and efficiency, expand the texture well. It will cost 6~7 hours by ordinary macerating pool, but you just need 2~3 hours by vacuum macerating machine.
